Holiday Cocktails for Merrymaking with Douglas Tiller of Hitch

Just as the leaves will certainly change this time of year, so will the cocktail menu at your local watering hole. From holiday classics like eggnog and hot cider to more contemporary introductions like salted caramel and bourbon-based creations, there’s a reason they call it Christmas cheer. We sat down with Douglas Tiller, owner of Hitch Limited, to find out how to up our cocktail game this season. Get ready to sip like Santa’s coming to town.

Located at 1216 Queen Street East, Hitch is a gem of a hole-in-the-wall ideal for catching up with friends or chatting up the bartender solo. Tiller tells us he’s personally a fan of bourbon, and as such it’s the main liquor-base for the majority of the drinks on the his cocktail list. Around the holidays, he has two go-to drinks for merry making.


Paper Plane
.75 oz Bourbon
.75 oz Aperol
.75 oz Amaro Nonino
.75 oz Lemon juice

Add all ingredients to a shaker and fill with ice.
Shake, and strain into a coupe glass.


Bourbon Sour
2 oz Bourbon
1 oz Fresh lemon juice
1 oz Simple syrup
1 tsp Egg whites

Add all the ingredients to a shaker and fill with ice.
Shake well, and strain into a rocks glass filled with fresh ice.
Garnish with sour cherries and mist with bitters of choice.
